2 Spice jar measuring spoons The rectangular shape means these heavy-duty stainless spoons will fit in nearly any spice jar or tin. 3 Silpat, dough scraper and pie shield The silicone in the large Silpat French baking mat ($20) provides the ultimate non-stick surface for rolling out pie pastry. Use a dough scraper ($2-$5) to help move the dough around and scrape the last bits out of the bowl. The pie shield ($5) works much better than aluminum foil at keeping pie crust from burning before the rest of the pie is done. 4 Pastry wheel and blender I found this olive-wood pastry wheel at a market in France for $3, but you can find them in nearly all kitchen shops. They give a pretty edge to lattice strips for the tops of pies. A pastry blender is the best tool for working butter into flour. The tines don’t even have to be sharp. Expect to pay less than $5 at kitchen stores or in the baking aisle at the grocery store.
