A Letter From The Editor

Late summer is my favorite time of year, especially here; the days aren't quite as hot and nights are positively pleasant. As I write this, in late August, the grocery stores are displaying bulging towers of local peaches, pears, figs and apples and I'm enjoying every moment of it, eating up as much as I can and preserving the rest. But I know the best is yet to come: the chile harvest. Just this week, roasters began to appear in front of grocery stores and in vacant lots—harbingers of the precious harvest to come. As much as the smell of piñon smoke wafting from kiva fireplaces in the winter, September's aroma of roasting chile evinces New Mexico's very soul. It is to this we dedicate our annual Chile Issue.

Inside this issue you'll find musings on all aspects of chile, conversations with growers, chefs and gurus.

You may also wonder where this month's wine-tasting is. Well, after a year and a half of terribly hard work (read: wickedly good fun) we finally needed a break. But not to worry, we'll be back after Santa Fe Wine and Chile, rested, reinvigorated and ready to taste some wine.
